The life-long dream of an energetic couple – Beau and Jo, duh – whose sole desire is to bring you delicious coffee, an uplifting breakfast, and sparkling conversation, this is the perfect way to start your day. Their signature brew – Carpe Kope (from the Latin “to seize” and the Hawaiian for “coffee”) – was designed in partnership with Hammerhead Coffee Roasters and is a unique blend of beans Ethiopian Harrar, Brazilian, and Honduran beans. Local and Organic
Elsewhere on the menu are organic artisanal bagels from Ya Quddus Bagelry that form the backbone for delicious breakfast sandwiches. Choose from the Early Bird with pesto cream cheese, Strawberry Fields, Lox it up with smoked salmon cream cheese, or the Funky Monkey. Bagels run the entire spectrum (get it?) of flavors from plain to cheddar jalapeno, and there is a cream cheese for every taste bud, whether you like it sweet or savory. They also offer made to order smoothies featuring island fruits, local veggies from organic farms, and of course, plenty of kale.
Coffee On the Go with Rainbeau Jo’s Kauai
The iconic food truck is hard to miss, thanks to its large rainbow and the cheery smiles of satisfied customers that seem to follow it around. Usually located in Nauwiliwili just south of Līhu‘e, the truck is open Tuesdays through Fridays from 7am to 11am, and Saturdays from 8am to 1pm. It is closed Sundays and Mondays.
