Ingredients:
• 1 1/2 ounces rum
• ¾ oz Blue Curaçao liqueur
• ¾ oz cream of coconut
• 2 oz pineapple juice
• 1 maraschino cherry (for garnish)
• 1 pineapple wedge (for garnish)
Steps to Prepare:
1. How could you come to Hawaii and not have a Blue Hawaiian? Especially when it’s this easy to whip up! Simply fill a mixing glass with ice cubes, then pour in the rum, Blue Curaçao, cream of coconut, and pineapple juice. Stir well.
2. Strain into your drinking glass and add the garnishes.
3. For bonus points, add a paper umbrella.
Hawaiian Chicken Skewers
Prep time: 10 minutes (+ 2 hours to marinade)
Cook time: 20 minutes
Ingredients:
• 3 tbsp soy sauce
• 3 tbsp brown sugar
• 2 tbsp sherry
• 1 tbsp sesame oil
• ¼ tsp ground ginger
• ¼ tsp garlic powder
• 8 skinless, boneless chicken breast halves (cut into 2-inch pieces)
• 1 can pineapple chunks, drained (20 oz)
• A pack of wooden skewers
Steps to Prepare:
1. In a glass baking dish, mix the soy sauce, brown sugar, sesame oil, sherry, ginger, and garlic powder to make the marinade, then stir in the chicken and pineapple. Refrigerate for 2 hours.
2. Fire up your vacation home’s grill (medium-high heat).
3. Prepare the skewers to cook by threading on the chicken and pineapple. Grill them for 15-20 minutes depending on personal preference, turning them occasionally to cook evenly.
Hawaiian Banana Nut Bread
Prep time: 10 minutes
Cook time: 1 hour
Ingredients:
• 3 cups all-purpose flour
• 3/4 tsp salt
• 1 tsp baking soda
• 2 cups white sugar
• 1 tsp ground cinnamon
• 1 cup chopped walnuts
• 3 eggs
• 1 cup vegetable oil
• 2 cups mashed banana (soft & ripe is best)
• 1 can crushed pineapple, drained (8 oz) 2 teaspoons vanilla
• 1 cup coconut flakes
• 1 cup maraschino cherries, diced
Steps to Prepare:
1. Preheat oven to 350°F. Prepare two bread pans by greasing them lightly.
2. In a bowl, mix together the flour, baking soda, sugar, salt, and cinnamon. Mix these very well before adding the next set of ingredients. Then you can throw in the oil, vanilla, eggs, walnuts, banana, pineapple, coconut, and cherries. Stir well, and then pour the batter into the bread pans.
3. Bake for 1 hour, and voila! A Hawaiian dessert that you can enjoy for your whole vacation on the island of Kauai.
